Peruvian yacon syrup. That’s yacon with a “Y.”
Two months ago, this dark brown syrup similar to molasses was relatively unknown outside of South America. Thanks to a famous television doctor, who we will refer to as “Dr. O” for anonymity’s sake, yacon syrup is now receiving the respect and reverence it justly deserves. This all natural sweetener contains about half the calories of honey and it barely impacts blood glucose levels, making it a great sugar-substitute for diabetics and people looking to cut calories and lose weight.
It all starts in the Andes Mountains in Peru where the yacon plant is grown. Unlike many tubers and rooty plants which store carbohydrates as a starch or glucose, the yacon plant stores carbohydrates as a “Fructo-Oligo-Saccharrides” (FOS) or fructose. The small difference in this plant makes a big difference in the human body: because our digestive systems have no way to break down FOS, it goes through our bodies with minimal caloric and blood sugar level impact. Luckily, the high amount of potassium and moderate levels of calcium and antioxidants yacon also contains do get absorbed. It is also thought that yacon syrup encourages the growth of healthy bacteria in the colon while eliminating bad bacteria, which can lead to dramatic weight loss in some people.
The best news is that you can use yacon syrup in nearly the same way that you’ve been using honey, agave syrup, maple syrup, and plain or raw sugar. Depending on how it’s made, yacon syrup ranges in color and flavor from darker and molasses-like to lighter and caramel-like. The varieties from Essential Living Foods and SunFood, for example, are 100% organic and minimally processed and pasteurized, so they are lighter in color and have a sweeter than other brands. We highly recommend drizzling yacon syrup on your morning oatmeal and using a few drops of it in a homemade yacon salad dressing for dinner.

Holiday Tips you can Really Use
Let’s be honest, getting ready for Thanksgiving is always a challenge. Certain celebrities try to sugarcoat by suggesting you play fun music while you prep the bird, have a few drinks while you’re cooking, or maybe even start a few days early by chopping up vegetables and setting out silverware. Deep and Delicious Brown Rice Vinegar

Paleo Trail Mix
1 Cup Whole Almonds
½ Cup Whole Cashews
½ Cup Raw Pumpkin Seeds
½ Cup Raisins
½ Cup Dried Currants
½ Cup Dried Blueberries
½ Cup Coconut Flakes
Preheat the oven to 350 degrees. Toast the nuts for 10 minutes until golden brown. Let the nuts cool and then combine all ingredients. Store in an air tight container.
Back To School Trail Mix
1 Cup Granola
1 Cup Crispy Rice Cereal
½ Cup Pecan Halves
½ Cup Banana Chips
¼ Cup Raisins
Handful of Diced Dried Fruit
Chocolate Chips (if it needs some sweetening)
Combine all ingredients and store in an air tight container. Seriously. That’s it.
Now, go take a hike!

Baked Sweet Potato Tots
Makes 24 tots
1 lb sweet potatoes
1/4 cup Bobs brown rice flour
1 tsp kosher salt
2 eggs beaten
2 cups Panko bread Crumbs
Safflower oil in a spritzer, or pan release spray
- Boil a large pot of water & preheat oven to 375.
- Add the potatoes to the water and boil for 20 minutes.
- Remove from the water and allow to cool.
- Once cool enough to handle, peel the potatoes.
- Shred the peeled potatoes with a box grater.
- Add the grated sweet potatoes to a large bowl with the flour and salt. Combine well.
- Roll and squish the potatoes into tot shapes.
- Place tot in egg wash, then bread crumbs, shaking off excess, then
- Place them on a greased baking sheet and into a 375° oven for 30 minutes.
Serve immediately, a good dipping sauce can be made with non- fat yogurt, pinch of cinnamon, pinch of ground coriander, teaspoon of honey, and a little fresh lime juice.
Organic Mango, Banana, & Strawberry “K-Bobs”
Makes 8 “k-Bobs”
2 ea. Organic Banana, peeled, cut into 1 inch sections
1 ea. Organic mango, ripe, peeled, pit removed, cut in to 1 inch cubes
16 Organic strawberries, washed, stem removed
8 each 5” bamboo skewers
2 Tbsp. clover Honey
1 Tbsp. fresh squeezed lemon juice (1/2 a lemon)
Include other fruit varieties as desired. Always make sure the fruit is washed before starting any preparation. Place all the cut fruit in a large bowl with honey and lemon juice. Lightly toss to get all the pieces of fruit coated. Build fruit on skewers and arrange on platter and serve immediately, drizzle juice over “k-bobs,” can be kept under refrigeration for a few hours.
Turkey Quinoa Meat balls with Citrus BBQ sauce
Makes 24 meat balls
1 lbs. Ground Turkey
1/2 cups. Cooked Quinoa
1 tbsp. Minced garlic
1 tbsp. Soy sauce
Pinch Dried Oregano
Pinch Dried Thyme
½ cup Bob’s brown rice flour
Mix together all ingredients until well combined. Refrigerate for one hour. Form mix into balls. (Trick: rub a little oil in your hands before forming balls to get a smooth sphere shape). If the mix is to loose, add a little more rice flour to stabilize. Place balls on parchment lined sheet pan and bake in 350 degree oven, turn them every few minutes, they will take about 15 minutes to cook.
2 cups of your favorite BBQ sauce (I prefer all natural–avoid high fructose corn syrup.)
2 tbsp. Orange Juice
1 tbsp. lime juice
1 tbsp toasted sesame seeds
Mix all the ingredients together and coat the hot meatballs, serve immediately.
